Been there, done it, got the T shirt,go and buy the bottle of your choice. Most grapes grown in Cyprus are for eating not wine making.

i agree with the others there is such a choice of good wines here why waste time trying to make wine from potato peelings etc like my auntes used to do, it was so bad all you could do with with it was to clean the sink with it no limescale after a bottle of her wine

just try using a clean white polythene bucket, one preferably with a snap on lid, no need for an airlock. If you c an't get a lid cling film it and prick a hole in the film and cover with a tea towel. You really don't need a demijohn as such. With all of the fruit growing in the coming months you can try all sorts of varieties from recipes on the net, though I must say having tried all sorts over the years, I definitely prefer a nice shiraz from the supermarket! Good luck. PS if you have friends over soon ask them to bring you some wine yeast, it can be painfully slow waiting for natural yeasts to start up, and a bit hit and miss as well.

Good luck with the wine making! No matter how experienced you are, you can use a bit of luck in that game... I think that the people who say that you can buy a better, more consistent product at the Supermarket are absolutely correct, but I think that they miss the point of a Hobby. The pleasure that can be derived from learning and practising any discipline, whether it's wine & beer making, cooking, computing, electronics, photography, gardening and growing your own food, - whatever - and the sense of accomplishment when you get it right (or even NEARLY right ) makes it so much more worthwhile than the simple 'balance-sheet' equation might suggest. Don't be discouraged if your early attempts turn out 'not quite right' - if it was easy, EVERYONE would be doing it! And if you need an independent 'taster', my fees are 'very reasonable' - in fact FREE! I've nearly recovered from the last batch of Home-Brew : - http://farm4.static.flickr.com/3400/3556495808_1910344789_o.jpg

Grapes good for eating are also the best for making wine. Sweet grapes make alcohol without need to add any sugar. The real art of wine making is knowing when to stop the fermentation. The stronger it gets the more flavour is masked by the taste of alcohol. To this end it's wise to invest in a Hydrometer to test the start, during and end specific gravity of your liquid so that you can calculate the amount of alcohol you've produced and know when to stop. About 12% is right for home-made wines. Be prepared to share the wine with others is another tip!
