hiya red many good butchers here, with in influx of good restaurants here they know now what we want.Our butchers we have 3, Guido has taught them all how to hang it, he goes in to clean it and its left to hang for at leaST 21 DAYS for us. they are getting better. However if you buy from supermarkets then proceed with caution, it looks good but i actually saw them paint it red xx we will not serve steak until its at least 3 weeks hung xxx
