YFred, I've told you five thousand million times - don't exaggerate... Maybe Sadie doesn't want to use real charcoal because it's slower, more expensive, takes longer and makes no difference whatsoever as all the taste comes from the smoke and flame which takes place with either type. I could be wrong... but I'm not. Heaven preserve us from the purists....

Groucho you obviously have not tasted one of YFred special BBQs dear boy. "The taste is the same" yeah right and pigs will fly if only you can find one in TRNC. Fat chance. How many times have I told you doing it slower is better. Ask any proper lady, none of your rough stuff.

How can you have a gas Barbecue ? The taste comes from the charcoal, Charcoal is free, (its wood) its every where you go. The taste from driftwood is amazing, or use some pine cones, or apple wood etc etc. I remember a friend of mine saying its the fat that drips onto the artificial coals that flavour the food (don,t think so) I have noticed over the years there is quite a big divide over this subject. ( But then again some people buy Iceland sausages)

Carob & Olive wood, well dried, I think is best for BBQ's here, and is freely available, takes 10-15 minutes from lighting to starting to cook. But don't use thick logs, unless you split them 1st, max 2 inches in diameter. For more flavour, throw on a couple of fresh/moist pine cones. Use the open/dry ones for starting the BBQ. YUM YUM YUM Is it too late for one tonight? )) Navek

What is the matter with everybody. How can BBQ taste good without Charcoal. Cooking with wood is never the same. Something is wrong in the TRNC. Has everyone lost their taste buds or something. I hope my GC cousins in the south have not polluted the air and the taste buds of the poor TRNC population by burning all their rubbish only when the wind is Northerly direction. Gawd preserve us, are we losing the only sacred practice left in Cyprus?

Not many of you charcoal advocates are actually describing using real charcoal.... bits of wood burned until glowing embers are used for cooking is not using charcoal. The wood you burn actually emits carcinogens, and in quite high volume too. i.e. it's not a safe way to cook. Let alone the crap used to start the fire! If you use a gas BBQ with larva rocks.... the real flavours, the ones that are not harmful to health, come from the food itself - those who have become addicted to the smell of anything other than the real food will continue to extol the virtues of their wood fires. Funny thing is, all food starts to taste the same when the source of the flavour is wood. I bet most of you 'wood-only-BBQ-addicts' are smokers.... But don't let me stop you. I'm happy for you... Just know that many of the forest fires have been caused by ill-attended wood fires and enjoy your smoky food tasting of what is it? That certain 'je ne sais quoi' Oh yeah - wood chip!

Our charcoal comes from our bread oven, it is made in just the same way that the charcoal you purchase is made. It doesnt cost me a penny, we have lots of Olive, Carob, and other trees in our land, and collect driftwood from the beach. That is so wrong about the flavours from the food, I was speaking to my Chef at my Restaurant, about our Tandoori oven, and he said to me If only we could get a proper one in the kitchen, and not a gas one, then we really would have proper Tandoori and nans. ( He is a master chef with over 30 years experience.) I do agree with you about bits of wood, I have seen some locals using bits of MDF, and chipboard etc, (thats Not good) well not unless you sniff glue. Also you do not need to use anything to start the fire, except some fine dry kindling wood. I have heard this story so many times, its the fat of the food that drips onto the coals and flavours the food.

Electric BBQ grills are the simplest to use and readily available. There are cheap and work instantly. There is no extensive set up required and are a great option for those who want minimum hassles and have little time. Electric grills can also be used inside the house and do not create smoke or flare ups. However, because they require electrical power, you may not be able to lug them to the beach. ------------------- http://www.simplybarbeques.co.uk/

when charcoal is properly alight it burns white hot with no smoke, the bbq taste comes from the fat in the meat or whatever dropping onto the fire causing the smoke that creates the flavour, this is the same on a gas bbq when the melted fat drops onto the heated lava rock. Gas is safer, quicker, more efficient and cheaper than charcoal
