As buttermilk is only 1 or 2 % fat the low fat UHT milk (pink cartons) is the next best option. However if you are after the cultured and thus thicker buttermilk, you will need to make it yourself as I've never seen the ready-made buttermilk here.. This can be done... google 'making buttermilk'.

Try Ayran that's sold in the shops made from yoghurt and water and added salt if you need it for cooking it may work due to the culture in the yoghurt like you would find in butter milk

To make buttermilk;

Put 1 TBSP white vinegar or lemon juice in measuring jug

Add full fat milk to 1 cup level

Stand 5 mins before using

Yes, "smetana" means "soured cream" in Russian.

Msg 6 is a buttermilk substitute recipe. Suitable for cooking. You require a culture to make real thickened buttermilk.



Norman, what use do you wish to put the buttermilk to?

Plain yoghurt works well in this type of recipe. It is hard to find buttermilk back home nowadays

though Tesco sometimes have it. It was always used for scones and such like. I think it's the

remains of milk left after butter has been churned.
