| Stuffing ingredients 1 tablespoon unsalted butter 6 rashers good-quality bacon, sliced into thin strips 3 shallots, peeled and finely chopped 2 sticks of celery, trimmed and finely chopped a sprig of fresh rosemary, leaves picked and chopped a large handful of dried cranberries 400ml dry cider ½ teaspoon ground nutmeg ½ teaspoon ground allspice sea salt and freshly ground black pepper handful of chopped walnuts zest of 1 orange 300g good-quality pork sausage meat 1 egg, free-range or organic 2 big handfuls of breadcrumbs Cont |

| Method To make the stuffing, melt the unsalted butter in a saucepan and add the bacon, shallots, celery and rosemary. Cook gently with the lid on for about 10 minutes, until the vegetables are very soft, but not coloured. Add the cranberries and the cider and turn up the heat a little. When the liquid has reduced to a third of its volume, set it aside to cool. Mix in the nutmeg, allspice, some salt and pepper, the walnuts, orange zest, sausage ment and egg, then fold in the breadcrumbs. Then stuff the bird |

| here's my recipe, quite a simple but tasty one coarsley chopped bread crumbs sausage meat sprinkling of sage 1 egg chopped (and shelled) roast chestnuts generous sprinkling of sage 1 chopped onion salt and pepper mix all together. Stuff in the turkey or make into golf size balls |

| I normally stuff my turkey with 2 different stuffings and do stuffing balls aswell (different flavour to the ones in the turkey). PS I must be going senile, I said sprinkling of sage twice. |

| I do an apricot stuffing that is very nice especially with chicken and turkey, Apricot Stuffing 1 Onion 1 stalk Celery 1 Tbsp. Olive oil 1 Tbsp. Thyme Fresh is poss 1 Tbsp. Parsley Fresh if poss 1 Tbsp. Sage 2 cloves minced garlic 1 Egg 1 cup dried Apricots 2-½ cups crumbled stale bread 1-½ cups chicken stock or vegetable stock In a pan, saute the chopped onions and celery with 2 Tbsp olive oil. Cook until the vegetables are translucent. In a large bowl, mix sauted vegetables, chopped garlic, chopped apricots, thyme, parsley, sage, and bread. In a small bowl, whisk together the egg and the stock, then pour over the stuffing and mix. Pour mixture into a greased casserole dish, and bake at 375 degrees. Check it is not too wet, if so add more breadcrumbs. Cook for 45 minutes or until the center is hot, or stuff your Chicken/Turkey. |

| Message 15, Mike I have a really good receipe for Christmas pudding if you want it. It is individual puddings that are light and quite easy to make, but have the wow factor, everyone says to me wow I'm surprised you made these Tomorrow mince pies with a difference! |

| I forgot to add, I make gravy stock using the giblets, liver (cook only for about 15 minutes or it gets bitter), neck, then take them out and use them in the stuffing. |

| Quick and easy Christmas puddings:- 150g self-raising flour, 1 level teaspoon of baking powder,1 rounded teaspoon of ground mixed spice, 50 g softened butter, 2 eggs, 75ml black treacle,110ml guinness, 2 tablespoons of dark rum you can miss this out if you don't have any,a jar of luxury mincemeat, 75g Bramley or any cooking apple cored peeled and finely diced, 175g of currents,25g of chopped roasted hazelnuts, the grated rind of a lemon and an orange, 8 metal or foil individual pudding basins, greasproof paper and foil. |
