| we are picking olives now (for the last 3 days) should we press the 1st half of the crop now and pick the other half by mid week , and then press them. or can do them all on wednesday. someone said they become acidic if not freshly pressed. and is it mega busy on a saturday and are the press's open sundays ?? |

| Hi, I am by no means expert as we have just picked ours for the first time. I was told by the guy at the olive oil factory and others that you should take them as soon as you can after picking. The best olives are green, just on the turn to black. We took ours to the Karsiyaka factory in 2 batches; each lot only having been picked for just over 2 days. You pay by the weight of the oil so it will make no difference to the overall price if you have to make several trips. Our oil was crystal clear. Hope this helps. |
