| With all the fuss about cage fighting in TRNC, which I am violently against, as are most people throughout Europe, I thought this delicious desert would demonstrate a more enjoyable use of a cage ! Baked apple in a golden cage. First make the cage. The squares of puff pastry you can buy from most supermarkets are quite suitable for this. Roll each square until it is 2 mm thick about 15cm square, cut a lattice with a sharp knife as in the photograph / diagram. Brush lightly with beaten egg. Lightly grease a mould about the same size as an apple. Then drape a square of the cut pastry over the mould teasing it lightly with your finger tips to open the lattice.. Refrigerate this for 20 minutes or more. Bake in a pre-heated oven , 180 degrees C for 7-8 minutes or until golden . When the cages are almost cold lift them carefully from the mould.
