If you defrost in water... add some vinegar to the water... it will kill off any germs. If anybody's turkey does get a bit whiffy, it's a good way to remove the bacteria causing the smell. Old butcher's trick.

Yum! I love Bratwurst But back to the subject - I also had problems with my christmas turkey not defrosting in a timely fashion and it was because I didn't take off the packaging. I dunked it in a sink of hot water in the end. Probably not the safest way but we all survived!

Maybe your fridge is too cold, to meet hygiene regs (UK) it should be about +4C Geoff Famagusta City P.S. Our fridge was running cold, when checked it was found to need re-gassing. You would have thought gas shortage would cause it to be too warm, apparently not as the compressor just keeps on running all the time.

Essentially when fully deep-frozen a turkey is pretty much a solid block of ice.... (Humans are 57% water, frozen turkeys even more so) Now think about it, a large block of solid ice and you put it in your fridge... OK the fridge will not come on so often but it will take ages for the turkey to defrost properly. Do take it out of the wrapper as that will not help with the air taking the cold away...the wrapping will also encourage bacteria to form once it's nearly defrosted but be sure to put some kind of protection from blowflies over it... gone are the days of the meat safe, sadly. You need to be careful to remove the wrapping without ripping the skin off the turkey. Contrary to message 10 when defrosting a turkey by submerging it in water a bit of vinegar does not pickle the turkey or even make it taste of vinegar.
