| does anyone know if you can buy salt petre (also know as potassium nitrate) but am not wanting it for bomb making before everyone starts down that route, as i wish cure some pork into gammon and do some beef into corned beef all sensible suggestions greatly appreciated |

| I have tried the pharmacy's and up to now no luck, I was fortunate to get some off Brinsley before he departed. You only need about a tablespoon for a large joint, I have now done three and they worked very well much better than the bought product. my recipe is for joint of Ham is, about 3kg 10 large tablespoons of salt, 1 cup of brown sugar one tablespoon saltpetre. Put in large bowl, make sure the joint is submerged (plate with large stone on ) bottom of the fridge for 7 to 10 days turn each day. Take out of solution wash thoroughly boil with an onion and carrot. Then smear outside with honey and Colman's (powder) mustard. then roast till done. Put in a container and again weigh it down with a heavy weight. Slice when cool. Unfortunately i have only a small amount of Saltpetre left i am also trying to source it so if you do better than me let me know. Hippo -a fine chef he is this wet morning. You can of course eat it hot. |
