rubbish my mate mustafas mum long way from catalkoy to karsiyaka but its to die for or theres a place past bogaz magusa cant remember the name but they only do kleftico and its the only restaurant there on the main road

Most of the 'Classic' dishes we have had in 'Tourist' restaurants in N & S Cyprus, such as Kleftico or Moussaka, have been truly apalling! ;-(



They havent the faintest idea of quality or preperation! They would be laughed off 'Masterchef'!



I cook better myself at home.



If you want really well prepared and tasty dishes, go off the beaten track, find the restaurants that are family run and full of Cypriots.



Failing that I can post recipes!

I actually use a large Moroccan Clay Tagine which can be sealed with foil for the preferred 4 hr cooking time.



They're actually avalilable from Tesco in the UK, or decent Kitchen shops.

I gaurantee that the best Kleftico is from Chapter 1 in alsancak. Every Thursday and Sunday Eat im or take away. 821 3100

Also the best Cheesecake in the world. You have to reserve that at weekends.

Ingredients for 4:



Lamb: either 4 lamb shanks or 1/2 or whole shoulder

(you can use 4 lamb steaks, but lamb on the bone is best)

2 Large onions, roughly chopped.

4 large potatoes peeled & quartered.

1 tin Plum tomatoes chopped, with juice.

(or 6 large tomatoes, halved)

3 cloves garlic chopped (optional)

3 bay leaves.

2 Tbs Rosemary (fresh or dried)

2 Tbs Oregano (fresh or dried)

2 Tbs tomato puree.

1 Pt Lamb stock (or water or veg stock) to almost cover ingredients.

Salt & pepper.



Cooking:

Place in clay pot, or large lidded casserole dish, but tightly seal under lid with foil.

Place in preheated oven at 150c or on hob at low simmer for 4 hours.



Do not be tempted to look! Leave it alone! As long as the lid feels hot, it's doing OK!



Serve with Greek Salad, Crusty bread, wine or Efes!



Enjoy!



p.s. If you have any leftovers (unlikely), take any bones out and blitz them up for a wonderful soup!

I would not book a coke at chapter 1, over priced , over rated , Having eaten there It is one place I would not eat again.

Best Kleftico in north Cyprus is in the Maronite village of Kormakiti

Yorgo the butcher cooks the best Kleftico...unlike the commercial Kleftico you get in restaurants this is the real deal...This is partly due to the fact that Yorgo's animals graze naturally in that area of the island and this reflects on the taste of their meat..



word of warning.....Unless you book early in the day you don't stand a chance of finding any Kleftico if you just turn up..

Seeing coke is just 2.5 ytl. May be this is to expensive for you. Obviously from your picture you eat lots so you are not able to eat out to regularly as to the cost involved. Maybe this is why you sit in front of your computer commenting on anything and every thing. May be you should think about booking a diet coke in stead.

My interest to John and Cemaliye is that of good food and enjoyment. İ said that you had to reserve cheesecake, because it is without comparison to any other available and many times İ go their with my wife and they have none left.



Try the cheesecake and make comment ( if they have any)

I love taking world recipes and doing my own thing with local ingredients.



Kleftico comes from the Greek word 'to steal', and is known as 'Bandits Meal'. There is no definitive recipe, it's whatever you can 'nick'!



The Greek 'Bandits' would steal a lamb and any veg they could, dig a small pit, light a fire with dry wood (no smoke), and put on stones. Once hot and the fire had died down, they would put the lamb and veg, herbs, water, wine, whatever, into a sealed pot or skin, place on the hot stones and cover with soil for up to 24 hrs. No smoke, no smells to give them away.

Most kleftico is made with goat - sorry to disillusion the lamb lovers! They do interbreed so might be goa-lamb.
