This is the one I used and its to die for, going to make some orange next, and thought I would spoon a little inside some little fairy cakes, just before cooking. I did this with jam once and boy were they yummy Great idea for the children to cook too.

Try grapefruit instead of lemons it also makes a tasty curd - especially with a little fresh ginger added!

Spider, try mixing some condensed milk with lemon juice to taste, scoop out the middle of fairy cakes and plug the hole up again. Top with meringue and cook on low temp until meringue cooked............... absolutely yummy!

I can't stand condensed milk as a rule but the lemon juice makes it lovely and tangy but slightly sweet and creamy - go on be a devil and try it!!!

Hi Lilli, I just like inventing new recipes, trying out new ideas ..................... and trying them out on unsuspecting neighbours!!! Such as peel-less lemon marmalade, GF fruit cake (which also has chocolate and rum or brandy in it) and all sort of scones - sweet and savoury:-0
