| If I brought my sausage maker to Cyprus, would I be able to get the skins out there? |

| lots of the local butchers make Cypriot style sausages, so the answer must be yes |

| The butchers are very reluctant to part with the tharms (intestines), or the veiling used to make the seftali, local sausage. |

| If you buy your meat from the same butcher you will have a rapor with him, there should be no problem buying any part of an animal. Especially in the villages. We are a friendly bunch after all. Please don't compare Sheftali with a sausage, there is no comparison. |

| Back in the UK collogen skins (synthetic) are widely available and easy to use. The ones made from intestines are better to eat but require loads of salting and soaking. I agree Yfred Sheftali and bought shop sausage - no comparison. But if you know how to make them just as you like them, they are something else, and the general term ' sausage ' is not be-fitting. Hope some one can help me out with the collogen ones. Or sounds like I might be smiling sweetly at a local butcher!!! Thanks for all your replies. |

| I get mine sent out from UK - WESCHENFELDER also supply black pudding mix/dried blood/haggis mix etc - just look on the web. A packet of casings comes in a small jiffy bag which pass through the postal system OK. Chap to talk to is Tim who is used to supplying Expats around the globe. |

| Veiling or caul is often available from the freezer section in the supermarket. It definitely is across the border in Orphanides and is about €1.40 for a pack which can be re-frozen. It is not sausage skin however as suggested but the type of wrap around sieftalia or faggots. |
