Ingredients:

6 - 8 slices of Wholemeal brown bread

approx 4 tablespoons of Granulated sweetner

6 oz of mixed fruit or sultanas

5 eggs

4 fl oz of Milk

1 teaspoon of mixed spice

1 teaspoon of cinnamon

Method

Finely chop the bread into small pieces and place in a bowl

add the fruit

add the Granulated sweetner

pour over the milk, stir and leave to stand until it softens

add the mixed spice and cinnamon and stir in

put the eggs in a bowl and beat thoroughly

add to the mixture in the bowl

place in a bread tin

cook at 180c for approx 1 hour.

The kids love eating cake without knowing they are heating good healthy wholemeal bread and for the adults this is a no fat fruit loaf - which tastes good. (measurements are approximate as I just throw it all together and it tastes great) Add your own extras ie honey, Jam etc.
