| A few people asked me if I would post with reference to the Gammon/Ham from Mr Pork, Cured to order, I think it was approx 23 TL per Kilo, Picked it up yesterday, We had a fairly large peice 43 TL I cut 8 gammon steaks off it pre cooked and froze them, the Knife went through it like butter. That left us with a nice end peice to Steam. I steamed it for about 1and a half hours, and it has made the most fantastic boiled ham, melts in your mouth. I used the left over stock to make rice really tasty. I would say that for 10 TL (as an example) you would make twice as much proper Ham, than the prepacked stuff you buy, We have brought so called boiled ham from a few places here, in vacum packs, and it has been awful, slimy and tasteless. I think they need about a week minimum notice. Hope this helps the many people who say they can't get decent ham. We are big fans of their products, everything we have had from there has been very very good. |

| Hi Helena and Barry, and thank you everone else for taking interest, I just feel that we are very lucky to have this superb meat outlet here, and that we should support it. I for one would hate to lose it. The products that we have brought from there have all been the best, I t beggars beleif, when people here think that they cannot get good food here, inTRNC. |

| Hi Lee and Jan! Yes, we do not go without anything! The only thing I missed sometimes when we first came here was double cream for some cooking dishes but we have learned to improvise and we have found all our favourite places to buy different foods, the Pork shop is a firm favourite with us. I have never thought about steaming the gammon, we dont have a steamer, could it be boiled? I have done that before with cloves and garlics stuck in. Gosh, it was such a long time ago....I cant even remember if it was cloves and garlics!! Regards, Helena |

| We agree the meat products from Mr HAMZA 's Pork Shop is excellent. Our Sunday moring English breakfasts are our weekly treat.Hamza's animals are all free range so their ham , bacon and sausages are a lot better than many in the UK |

| N.N. after A month in Pattaya, its not your ham that needs to be cured, More likley to be your Pork Sword. We used to use Listerine. Helena, only a gas steamer, not a fancy .elec one, (very basic) in my methods, I shall roast the next one in the bread oven. Jan wanted cottage cheese, and we hav'nt found here in 4 years, So This week I made some 2 different types. I would never buy it again, It is so simple to make, I work on the assumption that most things are made by someone, so if you cant get it make it. Also this week made Peanut Butter. 4 minutes start to finish. I remember someone posting that they couldn't get salad cream, well just make it Did you know that Peanut Butter was first made as a health food for people with bad teeth. I really do dislike the negatives about food in TRNC. We have some of the finest produce here. and if you do it right, it IS very very cheap. |

| After 1 month in Pattaya I couldn't have found the strength to cure a peice of gammon - I needed a tuk tuk to get down Walking Street. |

| Cottage Cheese, I used 2 pints of Fresh Milk, (not UHT type) Approx Half acup of white vinegar, or lemon Juice, (I used Lemon juice) Half approx teaspoon salt. Put milk in large stainless pot or saucepan, Heat up to approx 180 f/85 C, just approx, DO NOT BOIL. Turn off, heat, stand 5 mins , add lemon juice, or vinegar, allow it to cool, you will be left with approk 1lt of whey, (Buttermilk). sSrain Curd through muslin, add salt if you like it creamy add alittle cream, Now you can do what you like with it, I split it into 2 and put fresh parsley and black pepper, and in the other, small chunks of cheddar and onion, But you can add, whatever you want, tuna, prawns , diced chicken etc. etc. Fresh Chives are good,but can't seem to grow them. The Whey is a very good high protein drink, and you can spice it up with ginger or herbs, or use in making bread or nans, and lots of other things. Let us know how you get on. Regards Lee |

| thankyou so much Johnnylee, that sounds a brilliantly simple recipe, I thought you needed rennet. This is great for us because we make all our own bread and I can use the whey in that or in scones. Where are you based, I have chives growing in a pot and am going home to the UK on Monday for 10 weeks, you are more than welcome to have them. I am in Karsiyaka. They are easy but thirsty plants. | We don't have a Lidl here, and it would work out expensive cottage cheese to travel to the South to get it. get it. Also I feel that homemade is always better.Just my opinion, Great fun making your own food and normally more economical, but in the case of Cottage Cheese , you don't save agreat deal unless you do it in bulk. But sooooooooo much better than the stuff we used to get from supermarkets in the UK. |

| Nice one suehowlittle, How easy is it? I could not beleive the simplicity of making peanut butter. Getting back to the Gammon, we put some of the steaks on the barbecue, (we use proper barbercue ) not gas. They where excellent, little crispy outside but tasty and very tender. |

| I always made peanut butter and Mayonnaise for my kids when they were young and money was tight. Now they all make their own too! And no nasty preservatives. |

| I was interested to read about the gammon. I love the meat from that shop, but does he cure the ham properly now as we always had some from him at Christmas but it was awful and tasted more like roast pork. The curing process did not seem complete. If you say it has improved then I will definately give it another go |
