People living out here, share some of your ideas for evening meals that include local ingredients. (also to keep the electric bills down a little) Ideas where you don't need to use the oven.

BBQ, Hob....

Curry, chilli etc is good & can be frozen but does get a little boring.

Chicken thighs, orange segments, orange juice, marmalade, new potatoes, vegetable stock, salt and pepper, fresh parsley. Throw it all in a hob top skillet and cook for an hour and a half. (Brown thighs first)

Beef & Yogurt with Tomatoes

This recipe is best cooked close to serving and is not suitable for freezing or a micro. I cook this for four people in a wok on a BBQ while drinking vast quantities of red wine. 1 kilo of cubed steak, 1 teaspoon finely chopped fresh ginger, 2 crushed garlic cloves, 2 cinnamon sticks, 2 bruised cardamom pods, teaspoon of chilly powder, 1 teaspoon of cumin seeds, 1 teaspoon of garam masala (get it in Supreme), 200gm of plain yogurt, ½ tea cup of olive oil, 3 sliced onions, 2 cups water (may need more during cooking), 2 chopped large tomatoes, 2 tablespoon lemon juice, chopped coiander to garnish. Mix steak, ginger, garlic, cinnamon, cardamom, chilli, cumin, and garam in a bowl. Fry onions until soft, add bowl mix, cook until steak is browned. Get another glass of wine. Add water and simmer in wok with cover on for 60 minutes. add tomatoes, juice and corriander 10 minutes before serving. Got this from ‘Cook with Floyd’ its easy and tastes great

Do you have a firin oven? The tradtional cypriot oven? if so:

Put a joint of pork in a tray, add pealed potatoes, i cup of stock and a little olive oil , salt and pepper & cover the tray with tin foil.

Put in the oven once the flames have died down and cook for a few hrs.

Very simple , easy roast pork.

I make köfte, German style (500g minced beef, pork or lamb or mix), enough for 4, generous tablespoon tomato paste, 1 egg, large finely chopped onion, breadcrumbs-I cheat and use 3 weetabix- season to your liking with salt and pepper, a little bit chilli, chopped parsley. Mix thoroughly, make small appr. 5cm dia. 1cm thick burger shapes and shallow fry in oil. I often make double the quantity and we eat them cold another day with freshly made bread, lots of different chutneys, home made of course, and a big bowl of salad.

In my quest to find rye flour, I found this really nice bread mix. It's made by Söke and is called Seven Grain Bread Mix, really easy to make (english instructions on paket) and really tasty. Its best fresh, so I freeze half or freeze it sliced, that way you have lovely fresh bread everey day.

Get a chicken,put in a roasting tin,add fresh tomatoes,thinly cut carrots,potatoes,red peppers,yellow peppers,stick a lemon cut in half inside the chicken first,add as many other vegitables as you wish,several cloves of garlic,a few knobs of butter and a good dash of local olive oil,sprinkly with salt n pepper and some of your favorite hebs or spice mix/s,1 small glass of water.



Cover with foil,slam in the oven on 175 until veg has cooked and chicken is looking good,turn chicken onto its breast after 1 hour and cook some more,turn chicken back the right way up for the last 30 mins cooking with out the foil.give the veg a few stirs whilst its cooking.



Delicious and easy.take the lemon from inside the chicken when cooked and squeeze it over the veg and chicken.

Now Eat it

washed down with a few bottles of beer or what you want !

Courgette and feta fritters

900g/2lb courgettes, grated

Salt and freshly ground black pepper

Bunch spring onions, chopped

2 tbsp chopped dill

2 tbsp chopped flatleaf parsley

3 eggs

1 tbsp paprika

225g/8oz feta cheese/beyaz peynir

225g/8oz plain flour

oil for frying

Slices lemon, to garnish

Sprinkle the courgettes with salt and allow to drain for 20 minutes. I find when you get the very small ones it works best, not so much wet. Place the grated courgette in a clean tea towel and squeeze out the water. Mix with the onions, dill, parsley, eggs, paprika and freshly ground black pepper. Work in the feta cheese and flour.

Heat the oil in a deep, heavy-bottomed pan.Fry tablespoons of the mixture in the hot oil until golden. Remove with a slotted spoon and drain on kitchen towels. Garnish with slices of lemon and serve immediately. There are many versions of this recipe, but this is my favourite.

Ripe tomatoes throw them in a mixer and crush them. Fry some onions in olive oil first, and pour over the tomato slush. Let it fry for about 5 minutes then stir in 2-3 eggs. Cover and let it simmer for 1-2 mins (with black pepper, and cumin powder, plus a touch of cinnamon of course). Taste this and you will never eat an omelet again

Howard's BBQ Relish.



Slice Courgette, Aubergine, Onion and add to de-seeded red and green peppers sliced.

Quantity to match the number of people but 1 x Aub, 2X courg, 3 X red pepper(not Capcicum) 6-8 non hot green peppers

Start with olive oil a big 4" deep pan, heat and add chopped garlic, add in the onion once the garlic is browned.

Fry until onion is softened, add other ingredients, plus chicken stock, liberal dusting with biber pepper and dash of Balsamic vinegar, soy sauce and a little sugar. Add the sliced tops of the spring onions.

Cook slowly for about 30mins, covered, add some chopped dates and sliced apricots and a few sultana.

Simmer covered for about 20 mins, check taste, add very small amount of vinegar to taste.

Leave to cool.

This can be re-heated, frozen etc, great relish for all BBQ food

Forgot to add, great with Cyprus Baked potatoes.



Clean medium sized local pots.

BBQ on warning shelf of a BBQ for about 20 mins until the skins turn a little crispy and brown.



Remove and microwave for about 7-8 mins.



Return to BBQ shelf. Cook as many as you like as they will re-heat wonderfully.

Hi - my hubby is from Iskenderun, Hatay and one of my favourites from there is eaten mainly at breakfast, but could be eaten at any time of day sucuk ve yamurta (spicy beef sausage and eggs)



The sucuk is readily available in Starling and other supermarkets, we like the brand Solen and get the ajili one if you like it a bit spicy.



For two:-



Remove the skin fromthe sucuk and slice about 2-3 mms thick and fry in a dry pan cos lots of lovely oil comes out of the sausage when cooked. Then chop 2 tomatoes and add to frying pan, fry for about 2-3 mins. Add half to one teaspoon of whole cumin seeds, about half a teaspoon of chili power (or not if you don't like it spicy), a wee bit of salt and pepper (you don't need much as the sausage is well seasoned). Finally beat about 3-4 eggs in a bowl add to the frying pan, chop some flat leaf parsley (about 1-2 tablespoons) and add to frying pan and cook on a low-medium heat. Serve with local crusty bread - yummy. Quantities vary to taste.
