Chicken and Mushroom Soup



Malzemeler



250gr Kırnı piliç eti

1 adet doğranmış soğan

1 diş dövülmüş sarmısak

250gr dilimlenmiş mantar

1 adet defne yaprağı

10ml krema

Tuz, karabiber

Hazırlama Şekli



Piliç parçalarını pişirme kabına koyduktan sonra, soğan, sarımsak, mantar dilimleri, defne yaprağını iİlave ediniz. Kararınıza göre suyla doldurup, pişirme kabının kapağını kapatarak 1 saat süreyle pişiriniz. Çorba piştikten sonra piliç eti ve defne yaprağını çıkartınız. Derisini soyduğunuz piliç etini küçük parçalara ayırınız. Tuz ve karabiberi çorbaya ekleyip servis yapınız.

Tripe Soup



Ingredients



6 pieces of Kırnı drummettes

5 glasses of water

1 Kırnı egg yolk

2 tablespoons of flour

½ lemon juice

1 tablespoon of cider vinegar

1 garlic clove

Salt, thyme, chilli pepper



Instructions



Put Kırnı wings in a saucepan, add 5 glasses of water and bring to a boil. Take the cooked wings out of the water with a slotted spoon and put them in a bowl. When the wings are cool enough, remove the skin and bones.



Stir the flour, the lemon juice, the egg yolk, the vinegar and the crushed garlic in a bowl. Add some water from the saucepan and boil them for a few minutes. Add the skin of the wings, the chicken and the salt then remove from the heat.



Pour the soup into bowls and sprinkle the chilli pepper and the thyme over it. Serve hot.

Florence Style Kırnı Egg

Ingredients



8 Kırnı eggs

450gr spinach (Remove stems + wash well)

4 tablespoons of butter

1 small onion

1-2 cloves of garlic

55gr plain flour

230ml milk

1 teaspoon of Dijon mustard

Salt, black pepper

2gr gruyere cheese (chopped into small pieces)

Warm bread for serving



Instructions



Put the Kırnı eggs into a pan and cover them with some water and bring them to boil. Leave them to boil for ten minutes. Then remove them and place them in some water. When the eggs are cool enough cut them in half.

Egg, Garlic Bread

Ingredients:



3 KIRNI eggs

2 teaspoons of crushed garlic

Salt, black pepper

6 tablespoons of olive oil

6 slices of bread

Instructions:



Beat the eggs and mix them with warm water. Add the crushed garlic and spices then mix them together.



Heat some oil in a large pan. Dip the slices of bread into the egg mixture so both sides will be covered with the mixture.



Fry the bread until both sides are golden. (Note: the bread must be turned quickly, to avoid the garlic burning.)

Tripe Soup with Garlic Vinegar



The traditional turkish hangover prevention and cure. You'll find it everywhere where turkish people are living

1 lb. tripe

1 onion

1 clove of garlic

1 cup of flour

2 eggs

4 cups of water

1 tea spoon salt

1 table spoon vinegar

Wash the tripeand boil it in a pot together with the onion for about 20 minutes. Throw away the onoin and put the cooked tripe on the side.

Beat up the egg with the flour and pour the mixture into a pot . Heat it up, but don't let it boil. Dice the tripe and add it to the soup. Cook 5 more longer, than serve

for the Garlic Vinegar:



mash the garlic with a fork or in a mortar and fill it up with vinegar. Let the people pour this concoction over their soup as they like it.

Unfortunately, negotiations with suppliers for turkeys is continuing, we couldn’t decide the price yet, but it would probably be decided next week, I’ll post prices per kilo on the forum as soon as possible…
