| I tried last year but they just ended up going mouldy. What is a proven method to preserve olives? I would like to do both the black ones and also the split green ones with lemon and garlic. Thank you |

| crack each one with a stone, placein water, change water every day for 10 days. tip them out , give them a good wash, then place say a 4 cm layer of olives, then a layer of rock salt , do this till the top, Keep in airtight containers, if not air tight you will get mould. Personally i add the lemon and garlic when im about to use them.They should be ready in about 8 weeks .You could look online for other methods |

| I leave the green ones in plain water after 10 days of keeping them in water and only put salt and all that when I prepair some for the table. As for black ones,ı put 1 kg of rock salt to every 10 kgs of black olives.You must shake them in the drum every now and then to stop them going mouldy. However,for black ones providing the trees are in your garden I'd recommend to let them drop under the tree and use them for preserving.Thats when they are at their best. |
