has anyone seen any craime fraiche in the supermarkets over here? or if not, over the border anywhere? have looked but perhaps it is in turkish over here or in greek over the border??

Funnily enough we were just talking about this with some friends earlier today. Apparently, it is not to be had here, even on the Greek side. So if you discover some, please let us know. Cottage Cheese, Sour Cream, etc can be obtained, mainly from the South.

hi all we have tried in vain to get it so we make it , orders only i cannont beleive we have tried every single availabe supplier and they dont know what it is, i get asked on a daily basis. grouch you could make it i will email you receipe xx

Crème Fraîche

1/2 cup/4 oz heavy or whipping cream

1/2 cup/4 oz full-fat sour cream



Whisk the two together in a non-reactive bowl (glass, crockery or plastic) and cover the bowl with plastic wrap. Let stand at warm room temperature (about 70 degrees) for 12 hours to let it mature. It will be thick and slightly tart at the end of that time. [note-in a cold kitchen in the winter, this can take up to 24 hours]



Stir and transfer to the refrigerator. Chill, covered, for at least 4 hours before serving.



This will keep up to a week in the fridge and will become somewhat more tart as it continues to mature.



Makes 1 cup - enjoy

i found " creme fraiche" in the south to "alphamega" under the "elle et vire label - thick one for cooking -

For some reason (probably laziness) COA posted under my name and I know you can get Crème Fraîche in the south... I've seen it and I told her as much. Gone deaf I guess..



But as we don't bring dairy goods across the border I'm glad for the recipe...

I was thinking about where I could get whipping crean and sour cream in the north.

And to your Cyprus Home: I have not lived here very long, and I will probably with time adapt all my recipes. However, it is also the first place in the world where I meet such antagonism and segregation on such a multi cultural island.

And I have been a traveller for the past 10 years visiting different cultures and learning about many different cuisines....

Nope,



It's actually a very pleasant alternative to normal cream as it has a nice slightly acidic twang to it (without being off) and is ideal for very sweet dishes.



You can use kaymakli yoghurt or fromage frais but sometimes it's Crème Fraîche that you really must use to get the exact flavour...

For the uninformed



Creme fraiche is less in calories than full cream etc. and as such

(sorry if am wrong) has the taste of cream but still more calories

than yoghurt. At this time of year we do like to indulge in a little of

the FULL CREAM which nothing can surpass! (But just a wee bit mind ye)

ha, well said groucho!! am reading the replies this morning and i couldnt believe the one from cyprusishome. he obviously does no cooking in the kitchen. we dont need his sort of replies!! thanks to everyone else. will have a go at making my own.
