| I made some yesterday. Use fresh milk the long life wont work. Heat to just below boiling leave for a couple of minutes then stir in 2 tbls of lemon juice. It will separate, then strain in a fine sieve add a little salt if you want. Then chill. Its very nice, slightly lemony but i prefer that to adding white vinegar to set it off. |

| Sounds good! Is there only one type of fresh milk here which is full or can you get semi fresh milk? I find it difficult to digest UHT milk, just manage it in tea but using it in porridge (which I love) upsets my stomach for hours after. Wish we could get goats milk!! |

| Any milk that is heat treated or homogenised wont work it wont separate. Maybe the cheese would be ok for you as it is only the solids you throw the rest away. |

| No, you do not throw the rest away, use it when making bread or in scones. It is known as whey and is really good protein. Shame to waste it! |
